Apple Salsa

2 apples diced 3/8" cubes, peels on
1 jalapeno - finely diced (seeded and de-veined for less heat)
juice of 1/4 lime
1/4 cup finely chopped red onion
1/4 c fresh cilantro to taste
1/2 yellow bell pepper - diced
kosher salt and fresh ground pepper to taste

Mix all ingredients and enjoy with lime chips or on the side of smoked dry rubbed pork chops.
