Crust:
1 cup all-purpose flour
1/3 cup butter, softened
1/4 cup confectioners sugar
Topping:
1 cup sugar
2 eggs
2 tablespoons all-purpose flour
2 tablespoons lemon juice
1/2 teaspoon lemon extract
1/2 teaspoon baking powder
1/4 teaspoon salt
Confectioners' sugar
Combine the crust ingredients and pat into an 8-in. square baking pan. Bake at 375° for 15 minutes. Meanwhile, for topping, combine the sugar, eggs, flour, lemon juice, extract, baking powder and salt in a mixing bowl. Mix until frothy; pour over crust. Bake at 375° for 18-22 minutes or until light golden brown. Dust with confectioners' sugar.
